Cinnamon Chickpea Blondie

Ingredients

  • 1.5 cups boiled chickpeas (You can also use canned chickpea) 
  • ½ cup butter 
  • ¼ cup oats 
  • 2/3 cup grated coconut 
  • 1 tbsp sugar
  • ¼ cup pure maple syrup 
  • 1½ tablespoon ground cinnamon 
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking powder 
  • ¼ teaspoon baking soda 
  • ¼ teaspoon salt 
  • ¼ cup chopped walnuts

Directions

  1. Preheat oven to 180°C or 350°F. 
  2. Very lightly grease your baking tray with either oil or butter or line a parchment paper. 
  3. Combine all ingredients except walnuts in the bowl of a food processor and purée until smooth. 
  4. Pour the batter into the prepared baking dish. 
  5. Add the chopped walnuts and stir gently, then smooth the batter out. (You can skip this step if you don’t want to use the walnuts). 
  6. Bake for 25-30 minutes until the sides start to pull away from the baking dish and the top is firm. 
  7. The blondies will continue to firm up while cooling. Enjoy your blondies as a tea time snack! Happy Baking! :)
