Dal Makhani

Dal Makhani which actually translates to “Buttery Lentil” is an authentic and most known Indian preparation of the lentils from the land of flavours – Punjab. This is a delicious creamy preparation of mix of whole black lentils (sabut urad) and kidney beans (rajma) in butter, mild spices and cream.

This is one of the most popular main course dish in India and it’s certainly one of my husband’s favorite. You will find this on the menu of every Indian restaurant. Although, in restaurants they usually prepare the dal makhani a day in advance before they serve it to the customers and then at the time of serving, it is reheated with butter and served with a tempering of dried red chillies, kasuri methi and a dallop of butter(obviously) and cream on the top. They cook it a day earlier so that the taste of the dal is enhanced as it can get blended with the spices, butter and cream. The older, the tastier it is.

Originally, this is a slow cooking dish where you have to cook the dal and the rajma in an open pot on low flame for around 1-2.5 hrs. But if you don’t have that much patience, then you can always pressure cook it for around 6-7 whistles or until both the rajma and dal are almost mashed.

Few tips to prepare the best Dal Makhani:

  1. Slow Cooking: Making it requires a lot of patience. So if you want to get the best version of it, I would suggest that instead of using the pressure cooker, simmer it on a low flame for atleast 1-2.5 hours. Cooking on low flame enhances the flavors of the dal and also makes it rich in taste. If you don’t have the time to simmer it for an hour or two, then you can boil the lentils until they turn soft and while you are preparing the gravy, you can leave it open to simmer on a stove top until your gravy is ready or for atleast 30 minutes.
  2. Fresh Ingredients: Using fresh ingredients is a key to this dish. I always prefer to use fresh ingredients like ginger, garlic, tomatoes and onions. You can use the tomato puree and ginger garlic paste, if you want to. But I would suggest that you use the fresh ingredients as their taste and aroma will do magic.
  3. Free handed portion of butter: As the name suggests, makhani means a lot of butter. So, keep your hands open to use a generous amount of butter for preparing this. If you have white butter available, that will be the best.
  4. Dungar Method: You can give the charcoal smoke (dungar method) to the dal to get a smokey flavor.

Ingredients

  • 1 cup Whole Black Lentils (Sabut Urad)
  • ¼ cup Red Kidney Beans (Rajma)
  • ½ cup Onions (finely chopped or ground)
  • 2½ Tomatoes (medium sized, finely chopped or pureed)
  • 1½ tsp Ginger (finely chopped)
  • 2 tsp Garlic (finely chopped)
  • 1 tsp Green Chillies (finely chopped)
  • 2 tsp Red Chilli Powder
  • 1 tsp Cumin Seeds
  • 1 tsp Garam Masala
  • ¼ tsp Turmeric Powder
  • ½ cup Fresh Cream
  • 2 Dried Red Chillies
  • 1 Bay Leaf
  • 1-2 Cardamom
  • 1 tbsp Dried Fenugreek Leaves (Kasuri Methi)
  • 3 tbsp Butter
  • 2 tbsp Clarified Butter (Ghee)
  • Salt, as per taste
  • A pinch of Asafoetida
  • For Garnish:
  • 1 tbsp Fresh Cream
  • Chopped Coriander Leaves (Optional)

Directions

  1. Wash the lentils for 4-5 minutes twice using your palms and then soak them for 10-12 hours or at least overnight. I usually soak them for at least 12 hours.
  2. Once the lentils are soaked completely, wash them, and strain the excess water.
  3. If you are using the pressure cooker to boil the lentils then, add the lentils along with half of the ginger & garlic paste and bay leaf and 4-5 cups water and pressure cook for around 6-7 whistles or until they are almost mashed.
  4. If you are boiling the lentils in an open pot, then cook the lentils with half of the ginger & garlic paste and bay leaf and 4-5 cups of water on a low flame on the stovetop for around 1-2.5 hours or until the lentils turn soft.
  5. Meanwhile, heat ghee and 2 tbsp butter in a pan and add asafoetida & cumin seeds and let them crackle.
  6. Once the cumin seeds start crackling, add dried red chillies, chopped green chillies, cardamom and remaining ginger garlic paste and cook it for a minute or two.
  7. Then, add the chopped onions and cook them on a medium flame until they turn golden brown in color. Keep stirring it continuously so that it doesn’t burn.
  8. Now, add chopped or pureed tomatoes, mix well and cook them until the ghee starts leaving the sides.
  9. Once the tomatoes are cooked well, add the turmeric powder, red chili powder, garam masala and salt and mix to combine.
  10. Now, add the boiled lentils, mash them using a masher (if they are not almost mashed during boiling) and mix well. Add 1/2 cup water (or as required) and stir well.
  11. Simmer the lentils for around 30-45 minutes on a low flame, stirring occasionally.
  12. Add the remaining butter, fresh cream, and Kasuri methi to the dal & keep it on a medium flame for a few minutes and then turn off the flame.
  13. Serve the hot Dal Makhani garnished with coriander leaves and fresh cream along with Naan, Tandoori Roti or Rice.
